I created this encyclopedic book of healthy recipes not just for people with diabetes, but for anyone who craves delicious, easy-to-make foods that make the most of whole grains, abundant fruits and vegetables, and lean proteins. An extensive introduction explains how to eat smart when you have diabetes, stock a healthy foods pantry, use healthy cooking techniques, and much more. Every recipe has complete nutritional information and the chapters have informative sidebars with ingredient information, cooking tips, and shopping strategies.
I authored the first-ever dessert cookbook published by the American Diabetes Association, creating a delicious collection of sweets that kept with the ADA’s strict carbohydrate and fat limits. With an informative introductory chapter on meal planning to include sweets, the function of sugar in baked goods, using artificial sweeteners, tips on ingredients and equipment, plus 150 classic and contemporary desserts, the book is a practical guide for low-sugar baking.
Using my expertise in diabetes, I lent an authoritative voice to an overview of the role of dietary management of diabetes. Wrote engaging and informative sidebars, headnotes, and tips throughout this practical and easy-to-understand book.
